Crispy Golden Pan Fry
How to cook frozen Chinese dumplings, Korean mandu or Japanese gyoza — the method below is the same for all three, and it is the only crispy pan dumplings recipe you need. It is also how to cook MIRI frozen dumplings and how to pan fry MIRI potstickers for the crispiest result. Golden, crackling edges with a hot, juicy center — the classic way to enjoy miri dumplings.
- Heat 1 tbsp oil in a non-stick pan over medium heat.
- Place frozen dumplings flat-side down. Fry 2–3 minutes until the bottoms turn golden.
- Add 3 tbsp water and cover immediately. Steam 4–5 minutes until the water evaporates.
- Uncover, drizzle a little oil, and crisp for 1 more minute. Serve hot.
MIRI dumpling sauce: soy sauce, rice vinegar, sesame oil, a pinch of sugar and chopped scallion — whisk it together while the pan heats.
Chef's tip: Don't move the dumplings while the bottoms brown — that's what creates the signature crispy crust.
How to make dumpling sauce: whisk 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, a pinch of sugar, and chopped scallion while the dumplings fry. Add chili oil for heat.
